Chesapeake Bay Oyster Stew

List of Ingredients
- 1 cup milk
- 1 cup light cream
- 1 cup shucked fresh oysters
- 2 Tbsp butter
- Salt to taste
- Cayenne pepper to taste
- Tabasco sauce, for garnish
Instructions
- Heat the milk and cream together in a saucepan until very hot, but do not allow to boil. Add the oysters, butter, and salt.
- When the butter has melted, remove the stew from the direct heat. Place the saucepan over or in a larger pan of hot water. Allow the stew to ripen a few minutes, stirring it gently.
- Taste for salt, and add cayenne to taste. Pass the Tabasco and fresh, crisp oyster crackers or French bread.
Serves 2 to 4
