Clear Mushroom Soup

List of Ingredients
- 2 lbs. assorted mushrooms (shiitake, portobello, oyster, etc.)
- 2 shallots, finely chopped
- 2 cloves garlic, minced
- 1 quart chicken, beef, or vegetable consomme
- 1 tsp thyme leaves
- 1/4 cup dry sherry
- 1/4 cup butter or olive oil
- Parsley, chopped
- Salt and pepper, to taste
Instructions
- Clean and dry mushrooms; slice thin.
- Simmer consomme with sherry, thyme, salt and pepper over medium heat.
- In a large saute pan, heat butter or oil. Saute mushrooms, shallots, and garlic until wilted.
Ladle consomme into bowls; divide mushrooms among bowls. Garnish with parsley.
