Easy Seafood Soup

List of Ingredients
- 2 Tbsp olive oil
- 1 medium onion, quartered and sliced
- 4 cloves garlic, minced
- 1/4 tsp crushed red pepper
- 3 cups water
- 1 (28-ounce) can crushed tomatoes
- 1/2 cup dry white wine
- 1 tsp dried thyme
- Salt to taste
- 1 cup diced potatoes
- 1/2 cup sliced carrots
- 1/2 pound cod fillet, cut into bite-size pieces
- 1/2 pound shrimp
- 1/2 pound bay scallops
- 2 Tbsp chopped parsley
Instructions
- Heat the oil over medium heat in large saucepan or Dutch oven until hot. Add the onion, garlic and crushed red pepper. Cook and stir until the onion is tender.
- Add water, tomatoes, wine, thyme, salt, potatoes and carrots. Bring the mixture to a boil over medium-high heat. Reduce the heat to low. Cover and simmer for 10 to 15 minutes.
- Add cod, shrimp, and bay scallops. Cover and simmer for 2 to 4 minutes or until seafood is done. Garnish with parsley.
Makes 6 servings.
