Shrimp Fiesta Soup

- 2 Tbsp vegetable oil
- 1 cup chopped onions
- 1 tsp minced garlic
- 1 can (28-oz.) whole tomatoes, with juice, chopped
- 1 can (8-oz.) tomato sauce
- 4 cups chicken broth
- 1 can (4-oz.) chopped green chiles
- 1 cup diced butternut squash
- 1 tsp cumin
- 1/4 tsp hot pepper sauce
- 2 corn tortillas, cut into thin strips
- 1 ripe avocado, chopped
- 1 lb. shrimp, peeled and deveined
- Shredded Cheddar, tortilla chips, and cilantro leaves
Instructions
- Heat oil in large saucepan over medium heat. Add onions and cook, 5 minutes. Stir in garlic and cook 30 seconds. Stir in tomatoes, tomato sauce, broth, chiles, squash, cumin, and hot pepper sauce. Bring to a boil; reduce heat and simmer 15 minutes until squash is just tender.
- Add tortilla strips, avocado, and shrimp to soup; cook until shrimp are opaque throughout, 3 minutes.
Garnish with cheese, chips, and cilantro.
Makes 10 cups.
