List of Ingredients
- 1 Tbsp cooking oil
- 1/2 cup diced red onion
- 2 cloves garlic
- 2 cups diced zucchini
- 2 cups diced crookneck squash
- 2 carrots, diced
- 1 (1-lb.) can spicy black beans
- 1 whole chicken breast, diced
- 3 tsp chili powder, or to taste
- 1/2 tsp ground cumin
- 1-1/2 cups chicken broth

- Corn chips
- Optional: Salsa, sour cream, fresh cilantro
Instructions
- Heat the oil in a skillet and saute the onion, garlic, zucchini, squash and carrots until soft.
- Dump this mess into a pot and add the black beans, raw chicken, chili powder, cumin and chicken broth. Bring to a boil; reduce heat and simmer 45 minutes.
- Dish up into bowls and scatter corn chips over the top of each. If you want to add salsa, a spoonful of sour cream, and diced fresh cilantro atop each bowl, that won't necessarily make you a bad person.
