Therapeutic Chicken Soup

List of Ingredients
- 3 chicken breasts (bone in), skin removed
- 8 stalks celery, chopped
- 2 medium onions, chopped
- 1 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 4 to 5 cloves garlic, minced (plus 2 Tbsp minced garlic from a jar)
- 4 Tbsp chopped fresh parsley
- 2 to 3 Tbsp chopped fresh thyme
- 3 leeks, chopped (use the white part)
- 4 to 5 carrots, peeled and sliced
- 3 potatoes, peeled and cut into chunks
- 6 to 8 cans chicken broth (or equivalent amount of homemade stock)
- 3 Tbsp paprika
- Juice of 1 lemon
- 1 Tbsp sugar
- Salt, freshly ground pepper, and Tabasco sauce to taste
Instructions
- Combine all ingredients; simmer for 2 hours, uncovered, over medium-low heat. During the last hour of cooking, reduce heat and simmer, covered.
Variation: If desired, boil 1/4 to 1/2 box of fettucine or other pasta in a separate pan, according to package directions. Drain pasta; add to soup just before serving.
Makes 10 to 12 servings.
