Baked Cheese Grits

- 5 cups water
- 1 cup yellow or white quick (regular) grits
- 2 cups freshly grated Cheddar cheese
- ¼ cup (½ stick) butter
- 2 large eggs, lightly beaten
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- ¼ teaspoon Tabasco brand pepper sauce
Instructions
- Preheat the oven to 350° F. Grease a 1 ½-quart casserole or baking dish and set aside.
- Bring the water to a boil in a large, heavy saucepan. Stir in the grits and return to a boil. Cover and simmer over low heat until thickened, 15 to 20 minutes.
- Add the cheese and butter to the cooked grits and stir until both melt completely. Stir in the eggs, salt, garlic powder, and Tabasco and blend well. Pour the mixture into the prepared casserole and bake until it sets, 35 to 40 minutes. Remove from the oven and let stand about 5 minutes before serving.
