Beer-Battered Southern-Fried Shrimp

• Vegetable oil
• ½ cup all-purpose flour
• ½ cup cornstarch
• ½ tsp kosher salt
• ½ cup beer (not dark)
• 4 Tbsp unsalted butter, melted
• 2 egg yolks
• 2 pounds large or jumbo shrimp, peeled and deveined
• Cocktail sauce
Recipe
Pour the oil to a depth of 2 inches in a large Dutch oven. Place over medium-high heat and bring to 375°F.
Meanwhile, in a large mixing bowl, combine the flour, cornstarch, and salt. Add the beer, butter, and yolks, stirring until the mixture is smooth. Dip the shrimp in the batter and drop a few at a time in the hot oil.
Fry until golden brown, about 1 to 2 minutes, and then remove with a slotted spoon. Repeat with the remaining shrimp. Drain on paper towels and serve warm with cocktail sauce.
