Catfish Fillets

- 2 pounds catfish fillets
- Salt and pepper
- 1 cup cornmeal
- ¼ cup all-purpose flour
- 1 large egg
- 1 cup vegetable oil
Instructions
- Wash the catfish fillets under cold running water and pat them dry. Season with salt and pepper.
- In a large bowl, whisk together the cornmeal and flour.
In a separate shallow bowl, beat the eggs well. Dip the fish in the beaten egg, then dredge it in the cornmeal to totally coat it.
- Heat the oil in a large, deep skillet over medium heat until a pinch of flour dropped into the oil sizzles. Lay the catfish into the oil and fry until golden brown, 5 to 6 minutes per side. Remove from the pan and serve with potato salad, coleslaw, rice, or a green salad.
