Center Pier Hush Puppies

- 2 cups all-purpose flour
- 1½ cups cornmeal
- 3 Tbsp sugar
- 1 tsp baking powder
- 1 tsp salt
- ½ cup finely minced onions
- 1â…“ cups milk
- 1 cup water
- â…“ cup vegetable oil
- 1 large egg, beaten
- Corn or vegetable oil for deep-frying
Instructions
- Sift together the flour, cornmeal, sugar, baking powder, and salt in a large mixing bowl. Add the onion, milk, water, oil, and egg and stir just long enough to blend the ingredients.
- In a deep-fat fryer or deep cast-iron skillet, heat about 2½ inches of oil to 375°F.
- Drop the batter in batches by tablespoons into the fat, making sure not to crowd the pan, and fry the hush puppies till golden brown. Drain briefly on paper towels and serve immediately.
Makes at least 40 hush puppies
