Cherry Divinity Candy

Recipe Introduction
"This is the first candy I ever made. You need to work very quickly when dropping it onto the wax paper. An extra set of hands at that point will make things go a lot easier."
List of Ingredients
• 2½ cups sugar
• ½ cup light corn syrup
• ½ cup water
• 2 egg whites
• 1 tsp pure almond extract
• 1 cup finely chopped red candied cherries
Recipe
In a large saucepan, combine the sugar, syrup, and water. Place over low heat, stirring constantly until the sugar dissolves. Cover and increase the heat to medium. Cook 3 minutes.
Uncover and continue to cook to the hard-ball stage or until a candy thermometer registers 260°F. Set aside.
In the bowl of an electric mixer, beat the egg whites at high speed until stiff peaks form. Carefully pour a heavy stream of the syrup over the egg whites while beating constantly at high speed.
Add the extract and continue beating just until the mixture holds its shape, about 4 minutes. Stir in the cherries. Drop by rounded teaspoons onto wax paper. Cool to room temperature and store in an airtight container.
Makes 3 dozen pieces.
