Creamy Pimiento Cheese

- ½ pound extra-sharp white Cheddar cheese, shredded
- ½ pound medium orange Cheddar cheese, shredded
- â…” cup mayonnaise
- 3 ounces cream cheese, softened
- 1 tsp Worcestershire sauce
- ¼ tsp salt
- â…› tsp cayenne pepper
- â…› tsp freshly ground black pepper
- 1 jar (4 ounces) drained and chopped pimientos
Instructions
- Combine all of the ingredients, except the pimientos, in a food processor. Pulse the mixture briefly and repeatedly until well blended but not puréed.
- Add the pimientos and pulse until the mixture is well blended but not puréed. It should have some texture, with flecks of pimientos.
- Transfer to jars or crocks with lids, seal, and refrigerate. If possible, allow the cheese to sit for at least a few hours before serving.
Makes 3 cups
◦ Variations:
If you want to fancy up your pimiento cheese even more, add 2 to 3 tablespoons of any combination of fine bacon bits, minced red onion, diced jalapeños, bourbon (1 tablespoon recommended), and/or Dijon-style mustard (1 teaspoon recommended).

Pimiento cheese is often served as a dip with crackers or on tea sandwiches or celery. However, inventive Southern cooks put pimiento cheese on burgers, use it as filling for grilled cheese sandwiches, add it to the stuffing for butterflied chicken breasts, and mix it into deviled egg filling.
