Crispy Southern Hushpuppies

Recipe Introduction
"This unique name originated when hunters would gather around the fire at the end of the day. The hunting dogs would start barking and begging for food. The cook would drop bits of cornbread batter in the oil and throw them to the hungry dogs, with the admonition, 'Hush, puppy!' Brilliant!"
List of Ingredients
• Vegetable or canola oil for frying
• 3â…“ cups plain cornmeal
• 1¼ cups all-purpose flour
• 2 Tbsp baking powder
• 2 tsp salt
• ¾ tsp black pepper
• 3 eggs
• 1¼ cups milk
• â…“ cup finely chopped onion
• ½ cup vegetable oil
Recipe
Pour the oil 4 inches deep in a cast-iron skillet. Place over medium-high heat and bring to 350°F.
Meanwhile, in a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and pepper. Make a well in the center and add the eggs, milk, onion, and oil. Stir until blended.
With an ice cream scoop, carefully transfer balls of dough to the hot oil. Fry 5 minutes, or until golden brown. Drain on paper towels. Serve hot.
