Deep-Fried Okra

List of Ingredients
- 2 pounds okra, well rinsed
- 1 egg, beaten
- 2 Tbsp water
- 2 cups buttermilk
- 4 tsp salt
- 2 cups all-purpose flour
- 2 cups cracker meal or saltines crushed to the consistency of cornmeal
- Freshly ground black pepper
- 4 cups vegetable oil
Instructions
- Cut the stem ends off the cleaned okra and slice ¼-inch thick. In a large bowl, mix together the egg, water, buttermilk, and 2 teaspoons salt. Add the okra to the mixture. Mix together the flour, cracker meal, the remaining 2 teaspoons salt, and the pepper in another bowl.
- Remove the okra from the buttermilk with a slotted spoon and add by spoonfuls to the flour. Toss lightly to coat and remove to a cake rack to shake off the excess flour.
- Meanwhile, heat the oil in an electric skillet or deep-frying pan to 350°F.
Add the okra by large spoonfuls and fry until golden brown, turning as necessary. Remove with a slotted spoon to a paper towel to drain. Keep warm while you fry the remaining okra. Serve hot.
