    Easy Saltine Pecan Toffee

    Recipe Introduction

    "Bless your heart if you've ever stood over a copper pot stirring 'til your arm falls off all while trying to reach a certain temperature on your thermometer so you can have 'official' English toffee. If you're hosting a party, you have no time for that, so let me let you in on a little secret: this Easy Saltine Pecan Toffee tastes just as good and you can whip it together in minutes."

    List of Ingredients

    ◦ 35 to 40 saltine crackers (approximately 2 sleeves)
    ◦ 1 cup unsalted butter
    ◦ 1 cup dark brown sugar
    ◦ 2 cups semisweet chocolate chips
    ◦ 1 cup chopped pecans

    Recipe

    Preheat oven to 400 degrees F. Line a baking sheet with parchment paper sprayed with nonstick cooking spray. Arrange crackers in a single layer, covering baking sheet.

    In a saucepan, combine butter and sugar. Stirring frequently, bring to a boil for 3 minutes. Remove from heat and immediately pour over saltines, spreading to edges to evenly coat.
    Bake for 5 to 6 minutes.

    Remove from oven and sprinkle with chocolate chips. Allow to cool on the counter for 5 minutes, then spread the chocolate chips evenly across toffee. Top with chopped pecans and allow to cool completely before breaking into toffee pieces.

    Makes 30 toffee pieces



    ❧ Tip:
    This toffee is an easy make-ahead item. Always try to have a few recipes from your party menu that can be prepped at least one day before your gathering.
