    Fabulous Fried Okra

    From "The Complete Southern Cookbook" by Tammy Algood

    List of Ingredients


    • 12 okra pods, sliced into ¼-inch slices
    • 1 Tbsp water
    • 1 cup plain cornmeal
    • 1 Tbsp all-purpose flour
    • 1 tsp salt
    • ½ tsp black pepper
    • Vegetable oil


    Instructions


    1. Sprinkle the okra with the water and set aside.

    2. In a medium bowl, mix together the cornmeal, flour, salt, and pepper.
      Pour the oil to the depth of 1 inch in a large cast-iron skillet and place over medium-high heat. Bring to 350°F.

    3. Coat the okra in the cornmeal mixture and carefully drop in the hot oil.
      Fry until golden brown, about 4 minutes. Drain on paper towels and serve.

      Makes 4 to 6 servings.
