Fried Onion Rings

- Vegetable oil
- 1 cup buttermilk
- 2 eggs, beaten
- Salt and pepper
- 1 Tbsp plus 2 cups self-rising flour
- 1 large onion, sliced
Instructions
- Preheat the vegetable oil in a large, deep frying pan to 325°F.
- In a mixing bowl combine the buttermilk, eggs, salt and pepper to taste, and 1 tablespoon flour. Mix well. Separate the onion slices into ring and place the onion rings in the buttermilk-egg mixture. In a mixing bowl, place the remaining 2 cups flour. Dredge the onion rings in the flour.
- Place the battered rings in the frying pan and cook 8 to 10 minutes until golden brown, turning twice. Drain on paper towels.
Makes 1 serving for onion lovers or 2 to 6 for others.
