Georgia Fried Vidalia Onion Rings

- 2 cups all-purpose flour
- Salt and freshly ground black pepper to taste
- Cayenne pepper to taste
- 1 cup buttermilk
- 2 large eggs, beaten
- 2 Tbsp peanut oil, plus more as needed
- 2 large Vidalia onions, cut into ½-inch-thick rings
- Peanut oil for deep-frying
Instructions
- In a bowl, combine the flour, salt and pepper, and cayenne and stir till well blended. Add the buttermilk, eggs, and 2 tablespoons oil and whisk till the batter is smooth, adding a little more oil if necessary to make a loose batter.
- Dip the onion rings in the batter to coat well and place on a platter.
- In a deep fryer or deep cast-iron skillet, heat about 2 inches of oil to 375°F on a deep-fat thermometer. In batches, fry the battered rings till golden brown and crunchy, about 4 minutes in all, turning with tongs. Drain on paper towels, season with salt, and serve as hot as possible.
