Hummingbird Sheet Cake

List of Ingredients
- 3 cups all-purpose flour
- 2 cups sugar
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 3 large eggs, beaten
- 1-1/2 cups vegetable oil
- 1-1/2 tsp vanilla extract
- 1 (8-ounce) can crushed pineapple, drained
- 1 cup chopped pecans
- 2 bananas, chopped
- Cream Cheese Icing (recipe follows)
Instructions
- Preheat the oven to 350°F. Lightly grease a 13- x 9-inch baking dish.
- In a large bowl combine the flour, sugar, salt, baking soda, and cinnamon, and blend well. Add the eggs and oil, and mix well. Stir in the vanilla, pineapple, pecans, and bananas. Stir gently to combine. Pour into the baking dish.
- Bake 40 to 45 minutes, or until a toothpick inserted in the center comes out clean. Cool completely. Top the cooled cake with the icing. Keep refrigerated.

Cream Cheese Icing
1/2 cup (1 stick) butter, softened
1 (8-ounce) package cream cheese, softened
1 tsp vanilla extract
4 cups powdered sugar
In a large bowl blend together the butter, cream cheese, and vanilla with a hand mixer or in a stand mixer. Slowly add the powdered sugar until all is incorporated.
