There's even an annual Nashville Hot Chicken Festival. We've turned this spicy favorite into a bite-size Southern appetizer that's perfect for parties and tailgates. You can also switch out yeast rolls or mini waffles for the biscuits."

â—¦ ½ cup buttermilk
â—¦ 2 eggs
â—¦ 1 tablespoon hot sauce
â—¦ 1 cup all-purpose flour
â—¦ 1 tablespoon salt
â—¦ 1 tablespoon black pepper
â—¦ 1 pound boneless, skinless chicken breasts or chicken thighs
â—¦ 2 tablespoons cayenne pepper
â—¦ ½ teaspoon garlic powder
â—¦ 1 teaspoon paprika
â—¦ 1 teaspoon brown sugar
â—¦ ½ cup butter, melted
â—¦ 24 prepared mini biscuits (use 1 ½-inch cutters for biscuit dough to create mini biscuits; recipe for Classic Southern Biscuits follows)
â—¦ 8 baby gherkin pickles, sliced
Recipe
In a Dutch oven or wide, deep pan, heat 2 to 3 inches of peanut oil to 350° F.
In a shallow bowl, whisk together buttermilk with eggs and hot sauce. In a second shallow bowl, combine flour, salt, and black pepper. Cut chicken into 1 ½-inch pieces. Coat each chicken piece in flour mixture, dip into egg mixture, and then back again in flour mixture. Fry chicken in batches (2 to 3 minutes on each side), being careful not to overcrowd the pan, until lightly golden (internal temperature measuring 165° F). Place fried chicken pieces onto a rack to cool.
In a small mixing bowl, combine cayenne pepper, garlic powder, paprika, brown sugar, and melted butter. Bruh mixture onto each fried chicken piece. Place fried chicken pieces inside biscuits and top with a pickle slice.

Classic Southern Biscuits:
â—¦ 2 ½ cups all-purpose flour
â—¦ 1 tablespoon sugar
â—¦ 1 tablespoon baking powder
â—¦ 1 teaspoon salt
â—¦ ¼ cup butter, room temperature
â—¦ â…“ cup shortening
â—¦ 1 cup whole milk
â—¦ Melted butter to brush the tops of the biscuits
Preheat oven to 450° F.
Mix flour, sugar, baking powder, and salt until blended. Add the butter and shortening. Using a fork, work the butter and shortening into the flour mixture. Pour in milk and knead biscuits 4 to 5 times. Turn dough out onto a lightly floured surface. Roll dough to 1 inch thickness and cut with a (1 ½-inch) biscuit cutter. Press the cutter into the dough and pull straight up—do not twist the cutter.
Place biscuits on a baking sheet lined with parchment paper and bake 12 to 14 minutes or until lightly golden. Remove from the oven and brush with melted butter.
