Okra-Shrimp Beignets

- Peanut oil
- 2 cups sliced fresh okra
- ½ green bell pepper, diced
- ½ medium onion, diced
- 1 large egg
- ½ cup all-purpose flour
- ¼ cup heavy cream
- 1 jalapeño pepper, finely chopped
- ¾ tsp salt
- ¼ tsp freshly ground pepper
- ¼ pound unpeeled, medium-size, raw shrimp (31/35 count), peeled and coarsely chopped
- Fresh Tomato Salsa (recipe follows)
- Cilantro Sour Cream (recipe follows)
Instructions
- Pour oil to depth of 3 inches into a Dutch oven; heat to 350°F.
- Stir together okra and next eight ingredients in a large bowl until well blended; stir in shrimp.
- Drop batter by rounded tablespoonfuls into hot oil and fry, in batches, 2 to 3 minutes on each side or until golden brown. Drain on a wire rack over paper towels. Serve with salsa and sour cream.

Fresh Tomato Salsa:
Stir together 4 large plum tomatoes, seeded and chopped (about 2 cups); ¼ cup chopped fresh cilantro; 1 jalapeño pepper, seeded and finely diced; 3 tablespoons finely diced red onion; 2½ tablespoons fresh lime juice; 1 tablespoon extra-virgin olive oil; and salt and pepper to taste.
Cilantro Sour Cream:
Stir together one (8-ounce) container sour cream; ¼ cup finely chopped fresh cilantro; 1 teaspoon lime zest; 1 teaspoon fresh lime juice; and salt and pepper to taste.
