Sausage Milk Gravy

- 4 ounces pork sausage
- ¼ cup (½ stick) butter
- â…“ cup to ½ cup all-purpose flour
- 3 cups whole milk
- â…› tsp red pepper flakes
- 3 to 4 heavy pinches salt
- ½ tsp black pepper
Instructions
- In a medium skillet over medium heat, cook the sausage, breaking it up into small pieces with the back of a spoon. Continue to brown and break up the sausage until it is cooked through, about 5 minutes. Set the meat aside on a paper towel-lined plate to drain.
- Add the butter to the skillet and allow to melt. Whisk in the flour and continue to cook and stir until the mixture is pale yellow, 2 to 3 minutes. Slowly whisk in the milk.
- Bring the mixture to a boil, whisking constantly until it becomes thick, about 10 minutes. Stir in the red pepper flakes, salt, and pepper. Add the sausage back to the skillet. Serve immediately.
Makes 2 to 3 cups, enough to serve 6 to 10 biscuits.
