"I can't imagine a world without pralines - nuts trapped in a candy so sweet and rich it nearly sets your teeth on edge, yet you find yourself craving them! Be sure to use a pot or saucepan large enough to accommodate the bubbly mixture."
List of Ingredients
• 1 cup buttermilk
• 1 tsp baking soda
• 3 cups sugar
• 1 cup (2 sticks) unsalted butter, melted
• 2 Tbsp light corn syrup
• Pinch salt
• 1 tsp vanilla extract
• 3 cups broken pecans
Recipe
Combine the buttermilk and baking soda in a large heavy pot. Add the sugar, butter, corn syrup, and salt and cook over low heat until the sugar is dissolved, about 5 minutes.
Bring the mixture to the boil and simmer until the mixture reaches 236°F on a candy thermometer (soft-ball stage), 10 to 12 minutes. Remove from the heat and let stand until lukewarm, 110°F.
Stir in the vanilla and pecans, and beat with a wooden spoon just until the mixture begins to thicken. Working quickly, drop mixture by tablespoons onto wax paper and let stand until firm. Store in an airtight container or freeze.
