Spicy Queso Dip

"Either dead sober, or after a few cold beers, cheese dip is one of my guiltiest pleasures. Naysayers, say what you will about a processed cheese blend, I'll let the results of this creamy and spicy dip speak for themselves in absolute deliciousness. Must. Have. Queso."
List of Ingredients
◦ 1 small onion, diced
◦ 1 tablespoon vegetable oil
◦ 1 clove garlic, minced
◦ 1 (16-ounce) package pepper Jack pasteurized prepared cheese product, cubed
◦ 1 (10-ounce) can diced tomatoes and green chiles
◦ 2 tablespoons chopped fresh cilantro
◦ Tortilla chips
Recipe
Cook the onion in hot oil in a large nonstick skillet over medium-high 8 minutes or until tender. Add the garlic, and cook 1 minute. Remove from heat.
Combine the cheese, tomatoes and green chiles, and onion mixture in a large microwave-safe glass bowl. Microwave at high 5 minutes, stirring every 2 1/2 minutes. Stir in the cilantro.
Serve with the tortilla chips.
Makes about 3 cups
