Recipe Introduction
"We have gathered and fed neighbors, offensive linemen, summer camp counselors, church staff, family members, extended family members, Lambda Chis, Kappa Kappa Gammas, and a jillion other groups of people. Have you caught on to that, yet? Well, it's true! And my hope is that this book will equip you with doable recipes that will expand your hospitality heart! We always make several pans of these skillet beans when we fix our BBQ menu. Sweet, spicy, smoky, and bacon-y—all the things that beans should be."
List of Ingredients
â—¦ 6 slices bacon, chopped
â—¦ 1 medium yellow onion, chopped
â—¦ 2 (28-ounce) cans pork and beans, drained
â—¦ 3 tablespoons chopped jarred jalapeños with juice
â—¦ ¼ cup dark brown sugar
â—¦ ½ cup barbecue sauce
â—¦ 1 tablespoon blackened seasoning
â—¦ Liquid smoke
Recipe
In a large skillet, sauté the chopped bacon over medium heat until crisp. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, reserving the bacon fat in the pan.
Add the onion to the pan and sauté until tender. Stir in the pork and beans, jalapeños, brown sugar, barbecue sauce, blackened seasoning, and a dash of liquid smoke. Taste and add more sugar, jalapeños or their juice, or blackened seasoning if needed. Simmer on low for about 30 minutes, or until the liquid reduces and thickens. Stir in the crispy bacon pieces just before serving.
