Venison: Chef Dave's Venison Chili Supreme

- 3 Tbsp canola oil
- 1½ pounds ground venison
- 1 medium onion, chopped
- 3 hot peppers
- 2 cloves garlic, crushed
- 5 Tbsp flour
- 3 Tbsp chili powder
- 1 tsp sea salt
- 1 tsp white pepper
- 1½ Tbsp cumin
- 1½ Tbsp oregano
- 4 cups water
- 5 beef bouillon cubes
- 1 can kidney beans (reserve juice)

- Steamed rice
- Grated cheese
Instructions
- Heat oil in a skillet.
Add ground venison, onions, hot peppers, and crushed garlic; cook until browned. Stir in flour and seasonings and cook for 2 to 3 minutes more. Set aside and keep warm.
- Place water and bouillon cubes in a large pot and cook over medium heat for about 10 minutes; then add the meat mixture and kidney beans with about half the juice. Simmer for about 1 hour.
- When ready, serve chili over a bed of steamed rice and top with grated cheese.
