    The author introduces this recipe as: "This is my version of Belgian waffle made in a regular waffle iron. They are my favorite waffle."

    They are apparently my families favorite waffle too. They want them for every meal now. They are more popular than the coffee cake.

    List of Ingredients




    Dry
    1/4 C. Sugar
    3/4 C. Cornstarch
    3/4 C. Potato Starch
    1 1/2 tsp. Baking Powder
    1/4 tsp. Xanthan Gum
    1/2 tsp. Salt
    1/2 tsp. Cinnamon

    Wet
    2 Eggs, Separated
    2 TBSP Oil
    1/2 tsp. Vanilla (Gluten-Free)
    3/4 C. Milk

    Other
    2 TBSP Shortening

    Recipe



    Beat egg whites to stiff peaks. Set aside.

    In separate bowl, mix dry ingredients. In yet another bowl, mix egg yolks, vanilla, and oil. Combine the dry ingredients with the wet. Add the milk slowly while mixing. Mix until all the lumps are removed. Gently fold the egg whites into the batter.

    Preheat waffle iron. Spray with nonstick spray. Pour batter onto iron when ready. Cook until light brown.

    We have a large waffle iron (from Williams-Sonoma in case you want a reference for size) and this recipe will only make two waffles. I have to triple it but we also have five people who REALLY like these.
