    Potato Breakfast Casserole

    This recipe will start a cold winters morning off with a bit of heat...

    List of Ingredients

    1 6oz package of frozen hash browns
    3 tbsp melted butter
    5 slices bacon, crisp
    4 oz pepperjack cheese, shredded
    1 green onion, minced
    4 x-large eggs, beaten
    1/2 cup cottage cheese
    1/2 tsp salt
    white pepper to taste
    4-5 drops hot sauce
    1 small can chilies, diced



    Recipe

    Preheat oven to 425* (to be lowered to 350* later)

    Grease a 8" pie pan.
    Spread hash browns on the bottom and around the sides.
    Brush with the melted butter and bake for 25 minutes.

    Fry the bacon until crisp, crumble and set aside.

    Lower oven heat to 350*

    Beat the eggs, add onions, both cheeses, salt, pepper, hot sauce and the bacon. Mix well and pour into the pie pan with the potatoes.

    Bake at 350* for 35-40 minutes
