Chicken Cutlets
4 skinless boneless chicken breasts
2 lightly beaten eggs
1 1/2 cups dry bread crumbs
2/3 cup grated Parmesan cheese
1/2 cup butter
1/4 cup olive oil
1 lemon cut into wedges...optional
Recipe
Mix the bread crumbs and the cheese.
Cut the chicken into 4x1/2 inch strips.
Dip strips into the eggs and then into the bread/cheese mix.
In a large frying pan, melt 1/2 of the butter and add 1/2 of the olive oil.
In a single layer add the chicken breast and brown both sides for about 3 minutes each. Add the rest of the butter and olive oil as needed.
Drain on paper towels. Serve with the lemon slices.
