A pot of soup in under 20 minutes....
List of Ingredients
6 cups beef broth
8 medium red potatoes, with peels on, diced
3 shallots, sliced
1 tbsp parsley....or more...to taste
1 tbsp dijon mustard
1/2 tsp cayenne pepper
1 cup swiss cheese, grated
Recipe
To a medium size saucepan add the broth, potatoes, shallots, and parsley.
Boil over high heat for 10 minutes or until the potatoes are tender.
When the potatoes are tender, pour into a blender and puree.
Pour soup into serving bowls, sprinkle witht the chesse and serve.
