    Chicken Rice Soup

    Found on the web in December 1995


    List of Ingredients


    • 1 large fryer
    • 1 onion...chopped
    • 1 stalk celery
    • 4 lemons
    • 4 eggs
    • 1 cup rice
    • salt and pepper to taste


    Instructions


    1. Cut the chicken into pieces. Sear over moderate heat until the juices begin to come from chicken.

    2. Add onion, celery, salt and pepper. Cover with water and simmer until tender.

    3. Strain broth; skin and cut up chicken.

    4. Add rice to broth. Add cut up chicken and cook until rice is tender.

    5. Squeeze the juice from the lemons.

    6. Separate egg. Beat yolks.

    7. Set chicken and rice off heat and slowly beat in the yolks and lemon juice.

    8. Beat egg whites until stiff and fold into soup.

    9. When reheating, do not boil.

    10. Make four servings.
