    Cream of Fresh Tomato Soup

    Cream of Fresh Tomato Soup


    1 small onion, finely chopped
    3 tbsp butter
    6 medium to large ripe tomatoes, peeled, seeded and chopped
    2 tsp salt
    1/2 tsp freshly ground black pepper
    1/4 tsp baking soda
    1/4 - 1/2 tsp dried sage
    1 cup heavy cream

    Garnish: Dollop of sour cream and chopped parsley

    Recipe



    Melt butter in a 4 quart saucepan. Add onion and saute for 5 minutes or until limp. Add tomatoes, salt, pepper, baking soda and sage. Saute for 10 - 12 minutes or until thickened and pasty. Remove from the heat and stir in the cream. Taste for seasoning. Return to stove top and heat through. Serve in heated soup cups or refrigerate and serve chilled with a dollop of sour cream and chopped parsley.
