    Potato Soup With Celery and Eggs

    Here in this part of Pennsylvania we grow a lot of potatoes and at this time of the year (Fall) the crop is being harvested. Hope you enjoy this recipe.


    List of Ingredients


    • 2 cups diced potatoes
    • 1 medium onion...chopped
    • 3 cups water
    • 1/4 cup celery
    • 2 tbsp butter
    • 3 hard-cooked eggs...chopped
    • 1 qt of milk...heated, but not boiled
    • 1 tbsp chopped parsley
    • salt and pepper to taste


    Instructions


    1. Boil diced potatoes and onions in 3 cups water.
    2. Add 1 tsp salt.
    3. Add chopped celery when the potatoes are partially cooked.
    4. When the potatoes are soft, pour in the heated milk and the chopped eggs.
    5. Add the parsley and the butter just before serving.
    6. Serves 4.
