    List of Ingredients




    4 oz Turkey Sausage

    1 med green Pepper ( Chopped fine)

    3/4 Cup of homemade hash browns

    1/2 cup chopped green onion

    Mrs. Dash & pepper to taste

    6 eggs

    Recipe



    In a very large skillet cook Turkey sausage until done.

    Remove; crumble and set aside.

    Drain drippings.

    Add potatoes, onions and Pepper and seasonings.

    Cook and stir for 2 minutes.

    Cover and cook, stirring occasionally, until the potatoes are browned and tender, about 15 minutes.

    Whip egg whites well and Stir into potato mixture.

    Cover and cook on low heat for 8-10 minutes, until eggs are set.

    Serve right away Makes 5 servings of Protein and 3 servings of Carb's
