    YUMMY PANCAKE CREPE

    List of Ingredients




    2 egg whites (2 to 3)
    1/4 c dry oats
    1/8 teaspoon cinnamon
    1 tbsp. Splenda
    1 tbsp water
    1/2 cup Fruit of your choice (This time I did FRESH BANANAS and STRAWBERRIES!!!!!!)

    Blend all ingredients (except fruit) in blender until smooth. Pour into preheated (on medium heat) non-stick Large skillet (sprayed with Pam) and swirled until bottom of pan is covered VERY THIN LAYER OF BATTER. Wait until top of pancake is almost dry and slide onto plate and flip onto other side. If you're not going to eat it immediately place on saran wrap and roll it up and refrigerate. This will be thin and crepe-like.

    Slice bananas and strawberries very THIN. Then mash up a two strawberries and add Splenda. Spread the mashed strawberries on the middle of the crepe (like you would beans on a burrito), then add the sliced fruit on top and ROLL CREPE. you can eat like a burrito.
