    A frittata is an Italian version of an omelet. They are wonderful for breakfast or an elegant brunch. Zucchini and Tomato Frittata combines savory seasonings with fresh garden vegetables for a delightful dish.







    List of Ingredients




    Ingredients:
    1 medium zucchini, cut in half lengthwise, then into 1/4-inch slices
    1 tomato, chopped
    2 teaspoons Minced Onions
    1/2 teaspoon Garlic Powder
    1/4 teaspoon Thyme Leaves
    1/4 teaspoon Season-All® Seasoned Salt
    1/8 teaspoon Ground Black Pepper
    4 large egg whites
    Pam**

    Recipe



    Directions:
    1. Sprayed Pam** in a nonstick omelet pan or large skillet over medium-high heat. Add zucchini and sauté 2 minutes.
    2. Add tomato, minced onion, garlic powder, thyme, seasoned with pepper. Sauté 1 minute.
    3. Beat egg whites mix well. Pour over vegetables in skillet. Cover, reduce heat to medium-low and cook 7 minutes.

    Makes 2 servings!
