    This makes a great brunch for those who like to start the day with a little "Kick"

    List of Ingredients




    List of Ingredients

    o 6 eggs whites
    o 1/4 Cup of Rice Milk
    o 1 Small chopped onion
    o 1/2 Cup Sweet Red Pepper
    o 1/2 Cup Green Pepper
    o Dash of Cayenne Pepper ( More to taste)
    o 1/2 Cup Spicy Salsa
    o 3 Cups of shredded potatoes ( Frozen is ok )
    o 2 Tbsp of Chicken Broth

    Recipe



    Instructions

    1. Saut� onions until barely clear in chicken Broth
    2. Toss the potatoes into pan and fry with the onions
    3. Then add peppers cook until tender
    I leave a little "crunchy"
    4. Mix the eggs, milk and seasoning
    beat until "fluffy" Into another bowl.
    5. Add egg mixture to potato and peppers
    Cook until done
    6. Spoon onto a serving plate or warming platter
    7. Top with Spicy Salsa or I would offer it in a side bowl with a small a spoon.
    8. Garnish with fresh sprigs of parsley
