    5 medium ripe peaches
    1/2 c. sugar
    1 t. lemon juice
    1/2 t. ground nutmeg
    1/4 t salt
    almond extract
    1 c. heavy or whipping cream
    1 instant vanilla pudding (3 1/2-3 3/4 oz. pkg)
    1 c. milk
    graham cracker crust

    Peel 1 peach, cut into chunks. In 1 qt. sauce pan thoroughly crush peach chunks with sugar, lemon juice, nutmeg and salt over medium heat. Heat to boiling, stirring often. Cook 5 minutes. Remove pan from heat; stir in 1/4 t. almond extract. Cool peach glaze slightly while preparing filling.
    With mixer at medium speed, beat shipping cream until soft peaks form. IN medium bowl, beat instant pudding as label directs but use only 1 c milk. Fold whipped cream and 1 t. almond extract into pudding. Spoon cream mixture into pie crust. Refrigerate pie 15 minutes or until set.
    Peel and slice remaining 4 peaches over cream mixture in crust. Brush glaze over peaches.
    Makes 10 servings.
