    Best Ever Blueberry Muffins

    List of Ingredients




    2 ¾ c flour
    ¾ c sugar
    ¾ c brown sugar
    1 t. baking powder
    1 t baking soda
    ½ t salt
    2 large eggs, beaten
    1 ½ sticks unsalted butter, melted ( ¾ c)
    ¾ c buttermilk
    1 T vanilla extract
    1 ¾ t lemon extract
    1 c blueberries*


    Topping: (combine the following)
    ¾ c old fashion oats
    ¼ c sugar AND brown sugar
    ½ stick melted butter

    Recipe



    Combine flour through salt, in separate bowl combine eggs, butter, buttermilk, and extracts-Add to dry ingredients and stir (do not beat) just until moist. Fold in blueberries. Put batter in lined muffin tins.

    Topping:
    Spoon 1 T on top of each muffin; lightly press into batter. Bake 20-25 min at 375*. Muffins freeze well.

    *if using frozen blueberries: thaw, rinse and pat dry. This will prevent the batter from turning blue.
