    Muffins with a crunchy streusel topping!

    List of Ingredients




    1 1/2 cups flour
    2 tsp. baking powder
    4 Tbsp margarine
    1/2 cup sugar
    1/2 tsp salt
    1 egg
    1 tsp vanilla
    1/2 cup milk
    1 to 1 1/2 cups rinsed and drained blueberries

    TOPPING

    2 Tbsp softened margarine or butter
    2 Tbsp brown sugar
    2 Tbsp flour
    1/4 tsp cinnamon
    1/4 cup chopped pecans

    Recipe



    Sift flour with baking powder and salt.
    With mixer, cream margarine with sugar until fluffy. Beat in egg and vanilla.
    Remove beaters, stir in flour mixture, alternately with milk, beginning and ending with dry mixture.
    Fold in Blueberries.
    Spoon batter into 12 lined muffin tins filling 2/3 full.
    Over top of each unbaked muffin, sprinkle topping.

    TOPPING

    Combine all ingredients with pastry cutter. Sprinkle on unbaked muffins.

    Bake 20-25 minutes at 400* or until golden brown.
