CHICKEN CROQUETTES

3 TBSP. butter
4 TBSP. flour
1 cup milk
1 tsp. Tony Chachere's Creole Seasoning
2 egg yolks
parsley to taste
1-1/2 cups finely chopped chicken (cooked)
1 cup finely chopped ham
2 TBSP. Parmesan cheese
1 egg, beaten
Seasoned bread crumbs

In a large deep skillet melt the butter over medium heat. Add the flour and milk, stirring constantly with a wisk till the sauce is smooth. Remove the mixture from the heat and add the Creole seasoning, egg yolks and parsley. Return the mixture to the heat, stirring for 1-2 minutes or until smooth. Add the meat and cheese to the sauce and mix well. Allow to cool. Shape the mixture into 8-10 croquettes. Mix the egg with 1 tsp. water. Dip each croquette in the egg and roll it in the bread crumbs. Refrigerate for 2 hours. Deep fry the croquettes in hot oil until they are golden brown and crisp.
