HERB ROASTED PORK LOIN

1 pork loin (3-pounds)
2 tablespoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
4 garlic cloves, minced
2 tablespoons extra virgin olive oil
Zest of 1 lemon
1 teaspoon kosher salt
1/4 teaspoon. freshly ground black pepper
Recipe
In a large plastic bag, add pork, rosemary, thyme, garlic, olive oil, and lemon zest. Massage marinade into the pork, squeeze all the air out of the bag, and seal it. Let pork sit at room temperature for 30 to 45 minutes.
Preheat the oven to 400°F with an ovenproof cast-iron skillet inside (this type of skillet is an excellent conductor of heat.)
Remove pork from marinade, letting the excess drip off. Season well with salt and pepper and place on the preheated skillet.
Cook for 35 to 45 minutes. For a juicy pork loin with a pink-interior, cook until it reaches 140°F on an oven thermometer or for a well-cooked pork loin, cook until it reaches 150°F on an oven thermometer.
Let the pork rest for 10 minutes before slicing into 1/4 inch thick pieces. Serve warm.
Tip: If using dried rosemary or thyme, use one-third the amount; 2 teaspoons dried rosemary, 2/3 teaspoon dried thyme.
Tip: Once the pork is sitting out after cooking, it will increase in temperature 5 to 10°F.
