SOUTH OF THE BORDER PASTA SALAD

    Source of Recipe

    CooknQT

    List of Ingredients

    4 1/2 C water
1 Lb. Tri-color pasta(any of the smaller or medium sized shapes are fine)
1 envelope powdered Taco Seasoning mix
    1 jar Taco Sauce
shredded or finely diced chicken (already cooked) (how much depends on how “meaty” you want it)*
3/4 - 1 C finely shredded cheese (Mexican Blend or cheddar)
1 small jar Green Chili Peppers (drained & chopped)

    Recipe

In a large skillet, mix together water, pasta and powdered taco seasoning. Cook over medium heat until pasta is tender (about 10 minutes after it comes to a boil). (Cooking it this way infuses the pasta with the seasonings.)

Drain pasta and set it aside to cool slightly. Put the pasta in a large bowl and add the chicken, taco sauce, peppers and shredded cheese. Mix well.

Serve by itself or with salsa, and sour cream as a garnish (a handful of black olives are nice too).

This is more on the mild side, you can make it hotter by changing the type of peppers, or adding some pepper sauce or hot sauce.
