- 5 lbs. potatoes
- 8 eggs
- 1/2 cup mayonnaise
- 3 tbsp. Creole mustard (Zatarain's)
- Tony Chachere's creole seasoning
- paprika
Instructions
- Peel potatoes and quarter. In a large pot, boil eggs and potatoes for 20 minutes.
- Place potatoes in large bowl. extract yolks.
- In another bowl, mash yolks and mix with mayo and mustard until creamy.
- Chop egg whites and add to potatoes.
- Add yolk mixture and blend well. Season with Mr. Tony's.
- Serve warm or chill and serve cold.
- Garnish with paprika.
- About 8-10 servings
