    List of Ingredients


    • 5 lbs. potatoes
    • 8 eggs
    • 1/2 cup mayonnaise
    • 3 tbsp. Creole mustard (Zatarain's)
    • Tony Chachere's creole seasoning
    • paprika


    Instructions


    1. Peel potatoes and quarter. In a large pot, boil eggs and potatoes for 20 minutes.
    2. Place potatoes in large bowl. extract yolks.
    3. In another bowl, mash yolks and mix with mayo and mustard until creamy.
    4. Chop egg whites and add to potatoes.
    5. Add yolk mixture and blend well. Season with Mr. Tony's.
    6. Serve warm or chill and serve cold.
    7. Garnish with paprika.
    8. About 8-10 servings
