    24 cherry tomatoes
    1 package cream cheese (room temperature)
    1 lb. bacon, cooked crisp and crumbled
    ½ cup mayonnaise
    ¼ cup chopped green onions
    3 tbsp. grated parmesan OR cheddar cheese
    2 tbsp. snipped fresh parsley

    Recipe



    1. Cut cherry tomatoes in half. Scoop out pulp and seeds. Reserve for cream cheese mixture if desired OR discard.
    2. Drain tomatoes upside down on sheets of paper towel to eliminate moisture from centres.
    3. Soften cream cheese and blend in remaining ingredients (tomato pulp may be added now if desired).
    4. Stuff the centre of each tomato with cream cheese mixture. (This is easiest done with a pastry bag)
    5. Refrigerate until well chilled and flavours have blended.
