Fudgy Chocolate Orange Cake

2 1/2 cups flour
1/2 cup Cocoa
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup butter
2 cups sugar
3 eggs, lightly beaten
2 teaspoons vanilla
1/2 cup milk
3 cups grated zucchini
1 tablespoon grated orange zest
1 cup chopped nuts
Mint sprigs or calendula blossoms for garnish
ORANGE GLAZE
1 1/4 cups sifted confectioner's sugar
1/4 cup fresh orange juice
1 teaspoon vanilla Recipe
Preheat oven to 350F
1. Sift the flour,cocoa, baking powder, baking soda, salt,and cinnamon together, then set the bowl aside. 2. In a different bowl cream the butter and sugar until pale and fluffy. Add the eggs, vanilla and milk to this mixture. 3. Stir in the dry ingredients and mix until well blended. 4. Fold in the zucchini, grated orange zest and nuts. 5. Pour into greased and floured bundt cake pan. 6. Bake 50-60 minutes. Allow cake to cool for 15 minutes before turning out on rack. To make the glaze: Mix together the sugar, orange juice and vanilla in a bowl. While the cake is still warm drizzle this mixture over it. Garnish with flowers or mint sprigs.
