1 (18.5 oz package) butter yellow cake mix
3/4 cup cooking oil
4 eggs
1 mandarin orange and juice
for the Frosting
1 (3 3/4 oz package) instant vanilla pudding mix
1 (15.5 oz) can crushed pineapple, drained
1 (9 oz) container frozen cool whip thawedRecipe
Cake
Beat all ingredients together for four minutes. Bake at 350°F in 3 layers for 25 minutes. The layers will be thin. The cake is best done in 3 layers but it may be baked in only 2 layers or in a tube pan; however bake the cake longer until tested done. Remove from oven and completely cool to frost.
Frosting
Mix all the ingredients by hand do not use electric mixer. Frost cake. Best to keep refrigerated.
Note: The frosting could be used on just about any cake.
