    Walnut Chiffon Cake

    List of Ingredients

    Measure and sift together in a bowl:
    1 cup flour
    3/4 cup sugar
    1 1/2 tsp. baking powder
    1/2 tsp. salt

    Make a well and add in order:
    1/4 cup salad oil
    3 egg yolks, unbeaten
    3/8 cup cold water
    1 tsp. vanilla
    lemon rind or orange rind

    Beat these ingredients with spoon until smooth. Measure in bowl:
    3 egg whites
    1/4 tsp. cream of tartar

    Recipe

    Beat white mixture until very stiff, but do not over beat. Pour egg yolk mixture over whites and fold in with spoon or spatula. Bake in ungreased 10 inch tube pan at 350 degrees for 10 minutes. Reduce heat to 300 degrees and bake for and additional 45 minutes. When cooked turn upside down on cake rack.
