    ½ cup diced lean ham
    ½ cup thinly sliced button mushrooms
    ½ red capsicum, seeded and finely diced
    1 tomato, diced
    3 cloves garlic, finely chopped
    2 green onions, finely choppeed
    1 tbsp shredded basil
    4 chicken breast fillets, skinned and flattened
    4 tbsp tomato paste
    1 cup grated mozzarella cheese

    Recipe



    Place ham, mushrooms, capsicum, tomato, garlic, green onions, and basil in a medium bowl. Stir to combine.

    Line a baking tray with baking paper. Place chicken breasts on tray. Spread each breast with 1 tbsp tomato paste. Spoon ham mixture evenly over each fillet. Top with cheese.

    Cook chicken fillets in moderate oven 180ºC/350ºF for 30 or 40 minutes or until chicken is cooked and topping is golden.

    Serve with salad and crusty bread. Chicken can be replaced with veal steaks or rump steak if preferred.
