Cinnamon and Nutmeg Crullers

12 cups flour
2 tablespoons baking soda
24 tablespoons butter (3/4 pound)
About 2-½ cups sugar
1 teaspoon ground cinnamon
1 teaspoon grated nutmeg
1 cup rose water (available at Gourmet Stores)
10 eggs, beaten

Rub the butter, 2-¼ cups of sugar and the flour well together, and add the spices, rose water and baking soda, and the eggs.
Knead the dough thoroughly and roll it out to about ½-inch thick.
Cut the dough into 5-inch strips about 1-inch wide. Twist these into various forms and fry them in the hot lard until they are light brown. Sift sugar over them.
Makes about 50 crullers
